1 medium zucchini, sliced into half-moons

1 block (14 oz) firm tofu, drained and pressed, then cubed

1 bell pepper (any color), sliced

1 cup broccoli florets

2 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon sesame oil

1 tablespoon olive oil

1 tablespoon cornstarch (optional, for a crispy texture)

½ teaspoon red pepper flakes (adjust for spice preference)

2 green onions, chopped

Sesame seeds, for garnish

Prepare the Tofu: Begin by pressing the tofu to remove excess moisture. After draining, cut the tofu into 1-inch cubes. If you'd like a crispier texture, toss the tofu in cornstarch until evenly coated.

    Sauté the Tofu: In a large skillet or wok, heat the olive oil over medium-high heat. Add the tofu cubes in a single layer and sauté for about 5-7 minutes, turning occasionally until golden and slightly crispy on all sides. Remove the tofu from the pan and set aside.

      Cook the Vegetables: In the same pan, add the sesame oil. Once hot, add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant. Then, toss in the sliced zucchini, bell pepper, and broccoli florets. Stir-fry for about 3-5 minutes or until the veggies are tender-crisp.

        Combine Ingredients: Return the sautéed tofu to the pan. Pour in the soy sauce and sprinkle with red pepper flakes. Toss everything together gently to combine and heat through for another 2-3 minutes.
