Zucchini Snack Bars

2 cups grated zucchini (about 2 medium zucchinis)

1 cup rolled oats

1 cup almond flour (or whole wheat flour)

1/2 cup honey or maple syrup

1/2 cup unsweetened applesauce

1/4 cup coconut oil, melted

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/2 cup chopped nuts (walnuts or pecans) (optional)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

    Prepare Zucchini: Grate the zucchini using a box grater and then place it in a clean kitchen towel. Squeeze out excess moisture to ensure the bars are not soggy.

      Mix Wet Ingredients: In a large mixing bowl, combine the melted coconut oil, honey (or maple syrup), applesauce, eggs, and vanilla extract. Whisk until well combined and smooth.

        Combine Dry Ingredients: In another bowl, mix together the rolled oats, almond flour, baking powder, baking soda, cinnamon, and salt.

          Combine Mixtures: Slowly add the dry mixture to the wet mixture. Stir until just combined. Fold in the grated zucchini, chocolate chips, and nuts (if using) until evenly distributed.

            Bake: Pour the batter into the prepared baking dish, spreading it out evenly. Bake in the preheated oven for 25-30 minutes or until the edges are golden and a toothpick inserted into the center comes out clean.

              Cool & Slice: Once baked, remove from the oven and let it cool in the pan for about 10 minutes. Then, use the parchment paper to lift the bars out and transfer them to a wire rack to cool completely. Once cool, slice into bars.

                Store: Enjoy immediately or store in an airtight container in the fridge for up to a week. These bars also freeze well for longer storage!
