Ingredients

2 medium zucchinis

1 cup shredded mozzarella cheese

½ cup marinara sauce

½ cup sliced pepperoni or diced veggies (bell peppers, mushrooms, onions, olives)

1 teaspoon Italian seasoning

½ teaspoon garlic powder

¼ teaspoon salt

¼ teaspoon black pepper

Fresh basil leaves for garnish

Olive oil (for brushing)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare the Zucchini: Wash the zucchinis and slice them into ½-inch thick rounds. If you prefer, you can cut them lengthwise for larger pizza vessels.

Season the Zucchini: Place the zucchini rounds on a baking sheet lined with parchment paper. Brush the tops lightly with olive oil and sprinkle with salt, pepper, garlic powder, and Italian seasoning.

Pre-Bake the Zucchini: Bake the zucchini in the preheated oven for about 10-12 minutes, or until they are slightly tender. This step helps to remove some moisture from the zucchini and makes them less soggy once topped.

Add the Sauce: Remove the zucchini from the oven and let them cool for a couple of minutes. Top each round with a spoonful of marinara sauce, spreading it evenly across the surface.

Layer the Toppings: Sprinkle shredded mozzarella cheese over the marinara, then add your choice of toppings (pepperoni or veggies).

Final Bake: Return the zucchini pizzas to the oven and bake for an additional 8-10 minutes, or until the cheese is bubbling and golden brown.

Garnish and Serve: Once out of the oven, garnish the mini pizzas with fresh basil leaves. Allow them to cool slightly before serving.
