Ingredients
  

  • 2.0 medium zucchinis, grated
  • 1.0 teaspoon salt
  • 1.0 cup crumbled feta cheese
  • 0.25 cup fresh parsley, finely chopped
  • 0.25 cup fresh dill, finely chopped
  • 0.25 cup green onions, chopped
  • 0.5 cup all-purpose flour
  • 2.0 large eggs
  • 1.0 teaspoon garlic powder
  • 0.5 teaspoon black pepper
  • 0.0 cup Olive oil, for frying
  • 0.0 cup Greek yogurt or tzatziki, for serving

Instructions
 

  • Prepare the Zucchini: In a large bowl, combine the grated zucchini and salt. Mix well and let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini.
  • Combine Ingredients: In a large mixing bowl, add the drained zucchini, crumbled feta cheese, parsley, dill, green onions, flour, eggs, garlic powder, and black pepper. Mix until all ingredients are well incorporated; the mixture should be somewhat sticky.
  • Heat the Olive Oil: In a large skillet, heat about 0.25 inches of olive oil over medium heat.
  • Form the Fritters: Using your hands, scoop a generous tablespoon of the zucchini mixture and form it into a patty. Gently place the fritter into the hot oil and repeat until the skillet is filled, but do not overcrowd.
  • Cook Until Golden: Fry the fritters for about 3.0 to 4.0 minutes on each side or until they are golden brown and crispy. Once cooked, remove them from the skillet and place them on a paper towel-lined plate to drain excess oil.
  • Serve: Serve the fritters warm with a dollop of Greek yogurt or tzatziki on the side for dipping.
