Zucchini Fries with Garlic Aioli

For the Zucchini Fries:

2 medium zucchinis

1/2 cup all-purpose flour (or almond flour for gluten-free)

2 large eggs

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Olive oil spray or cooking oil for drizzling

For the Garlic Aioli:

1/2 cup mayonnaise

2 cloves garlic, minced

1 tablespoon lemon juice

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Zucchini: Wash and trim the ends of the zucchinis. Cut each zucchini into sticks about 1/4-inch wide and 3-4 inches long. Place them on a paper towel and sprinkle with salt. Let them sit for about 10 minutes to draw out excess moisture, then pat them dry.

      Set Up Breading Station: In a shallow dish, place the flour. In another shallow dish, whisk the eggs. In a third dish, combine the panko breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, and a sprinkle of salt and pepper.

        Coat the Zucchini: Working with a few zucchini sticks at a time, first coat them in flour, shaking off excess. Next, dip them in the beaten eggs, allowing any excess to drip off. Finally, roll them in the panko mixture until well-coated. Transfer the coated zucchini fries to the prepared baking sheet.

          Bake the Fries: Lightly spray or drizzle the zucchini fries with olive oil. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden and crispy.

            Make the Garlic Aioli: While the fries bake, prepare the garlic aioli. In a small bowl, combine the mayonnaise, minced garlic, lemon juice, Dijon mustard, and season with salt and pepper. Mix until smooth and well-combined. Chill in the refrigerator while the fries finish cooking.

              Serve: Once the zucchini fries are golden brown and crispy, remove them from the oven. Serve them hot with the garlic aioli on the side, garnished with chopped parsley if desired.
