Ingredients

1 pre-made pizza dough (store-bought or homemade)

1 medium zucchini, thinly sliced

1 cup fresh or frozen corn kernels

1 cup shredded mozzarella cheese

½ cup ricotta cheese

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish

¼ cup grated Parmesan cheese

Instructions

Preheat the Oven: Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Prepare the Toppings: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the sliced zucchini, corn, oregano, red pepper flakes, salt, and pepper. Cook for 4-5 minutes until the zucchini is slightly tender. Remove from heat and set aside.

Roll Out the Dough: On a floured surface, stretch or roll out your pizza dough into a round shape, about 12 inches in diameter. If using a pizza stone, transfer the dough to a pizza peel dusted with flour. If using a baking sheet, lightly grease it with olive oil and transfer the dough directly onto it.

Assemble the Pizza: Spread the ricotta cheese evenly over the dough, leaving a small border around the edges. Follow with the sautéed zucchini and corn mixture, distributing it evenly. Top with shredded mozzarella cheese and sprinkle grated Parmesan cheese for an extra flavor kick.

Bake the Pizza: Carefully transfer the pizza to the preheated oven (or onto the heated pizza stone). Bake for 12-15 minutes, or until the cheese is bubbly and golden brown, and the crust is crisp.

Garnish and Serve: Once cooked, remove the pizza from the oven. Let it cool for a minute, then garnish with fresh basil leaves. Slice and serve hot, enjoying the delicious combination of zucchini and corn atop a cheesy crust!
