Zucchini Chicken Caesar Boats

4 medium zucchinis

2 cups cooked chicken, shredded (preferably rotisserie for convenience)

1 cup Romaine lettuce, chopped

½ cup Caesar dressing (store-bought or homemade)

½ cup cherry tomatoes, halved

¼ cup grated Parmesan cheese

1 teaspoon garlic powder

Salt and pepper to taste

1 tablespoon olive oil

Lemon wedges for serving (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    Slice the zucchinis in half lengthwise and scoop out the seeds to create boats. You can use a small spoon or melon baller for this.

      Brush the insides of the zucchini boats with olive oil, and sprinkle with garlic powder, salt, and pepper. Place them cut-side up on a baking sheet.
