1 ripe banana, mashed

1/3 cup vegetable oil (or melted coconut oil)

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 cup brown sugar (or coconut sugar)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chopped walnuts or chocolate chips (optional)

Instructions
 

Prep the Vegetables: Quickly wash, dry, and grate the zucchini using a box grater or a food processor.

    Mix Wet Ingredients: In a medium bowl, combine the grated zucchini, mashed banana, vegetable oil, egg, and vanilla extract. Whisk until blended.

      Combine Dry Ingredients: In another bowl, mix the flour, brown sugar, baking powder, baking soda, cinnamon, and salt until well combined.

        Combine Mixtures: Pour the dry ingredients into the wet ingredients and mix just until combined. If you’re adding walnuts or chocolate chips, gently fold them in at this stage.

          Prepare Baking Dish: Quickly spray a standard loaf pan (8x4 inches) with cooking spray or line it with parchment paper for easy removal.
