Ingredients

1 cup grated zucchini (about 1 medium zucchini)

1 cup peeled and grated apple (about 1 medium apple, Granny Smith or Honeycrisp recommended)

1 ¾ cups all-purpose flour

1 tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp ground cinnamon

½ tsp ground nutmeg

½ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

½ cup vegetable oil or melted coconut oil

1 tsp vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

Prepare the Zucchini and Apple: Grate the zucchini and apple using a box grater. If necessary, gently squeeze the zucchini to remove excess moisture using a clean kitchen towel. This helps in achieving the right texture for your muffins.

Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.

Combine Wet Ingredients: In another bowl, beat together the brown sugar, granulated sugar, eggs, oil, and vanilla extract until smooth and creamy.

Incorporate the Vegetables: Stir the grated zucchini and apple into the wet mixture, folding gently to combine.

Combine Mixtures: Gradually add the dry ingredient mixture into the wet ingredients. Stir gently until just combined. Do not overmix; it's okay if there are a few lumps. If using, fold in the walnuts or pecans and raisins or dried cranberries at this stage.

Fill Muffin Tin: Evenly distribute the batter into the prepared muffin tin, filling each cup about ¾ full.

Bake: Place in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.

Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.

Serve and Enjoy: Enjoy these delicious Zucchini Apple Muffins warm, or store in an airtight container for up to three days.
