Zucchini Apple Cinnamon Bake

2 medium zucchinis, grated

2 medium apples, peeled and grated (preferably Honeycrisp or Fuji)

1 cup rolled oats

1 cup all-purpose flour (or gluten-free flour)

1/2 cup brown sugar or coconut sugar

1/2 cup unsweetened applesauce

1/4 cup honey or maple syrup

1/2 cup chopped walnuts or pecans (optional)

2 teaspoons ground cinnamon

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

Cooking spray or parchment paper for baking dish

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Lightly grease a 9x13 inch baking dish with cooking spray or line it with parchment paper for easy removal.

    Prepare the Ingredients: Grate the zucchinis and apples. If you're using large zucchinis, make sure to squeeze out the excess moisture from them using a clean kitchen towel. This prevents the bake from becoming too soggy.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, ground cinnamon, baking powder, baking soda, and salt. Whisk until well incorporated.

        Mix Wet Ingredients: In another bowl, whisk together the eggs, unsweetened applesauce, honey (or maple syrup), and vanilla extract until smooth.

          Combine Ingredients: Pour the wet mixture into the dry mixture and add the grated zucchini and apples. If you’re using nuts, fold them in at this stage. Mix everything together until just combined; do not overmix.
