For the Pineapple Salsa:

1 cup fresh pineapple, finely diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1 jalapeño pepper, seeded and minced (adjust for spice preference)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

For the Quesadillas:

4 large flour tortillas

1 1/2 cups shredded Monterey Jack cheese

1 cup cooked chicken, shredded (optional)

1 tablespoon olive oil (for cooking)

Sour cream, for serving (optional)

Instructions
 

Make the Pineapple Salsa:

    - In a medium mixing bowl, combine the diced pineapple, red bell pepper, red onion, and minced jalapeño.

      - Add the chopped cilantro and lime juice.

        - Season with salt and pepper to taste.

          - Stir gently to combine, then set aside to allow the flavors to meld.

            Assemble the Quesadillas:

              - Lay one tortilla on a clean surface.

                - Sprinkle 1/4 cup of the Monterey Jack cheese evenly over one half of the tortilla.

                  - If using, add a portion of the shredded chicken on top of the cheese.

                    - Spoon about 1/4 cup of the pineapple salsa on top of the chicken (or cheese alone for a vegetarian option), then fold the tortilla over to create a half-moon shape.

                      - Repeat with the remaining tortillas, cheese, chicken, and salsa.

                        Cook the Quesadillas:

                          - In a large skillet, heat 1 tablespoon of olive oil over medium heat.

                            - Place one or two quesadillas (depending on the size of your skillet) in the pan and cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted.

                              - Remove from heat and let sit for a minute before slicing into wedges.

                                Serve:
