Ingredients

1 lb large shrimp, peeled and deveined

1/4 cup fresh lime juice (about 2-3 limes)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon ground cumin

1/2 teaspoon red pepper flakes (adjust to taste)

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup fresh cilantro, chopped (plus extra for garnish)

Zest of 1 lime

Lime wedges for serving

Instructions

Marinate the Shrimp:

    - In a medium-sized bowl, combine the lime juice, olive oil, minced garlic, ground cumin, red pepper flakes, salt, black pepper, cilantro, and lime zest. Mix well.

      - Add the shrimp to the bowl and toss to coat evenly with the marinade. Cover and refrigerate for at least 15 minutes, allowing the flavors to meld.

        Prepare the Grill or Skillet:

          - Preheat your grill to medium-high heat. If you’re using a skillet, heat over medium-high heat and lightly oil the pan.

            Cook the Shrimp:

              - Remove the shrimp from the marinade, letting any excess drip off.

                - Grill the shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. If using a skillet, cook for the same amount of time until the shrimp are nicely seared.

                  Garnish and Serve:

                    - Once the shrimp are cooked, transfer them to a serving platter.

                      - Garnish with additional chopped cilantro and serve with lime wedges on the side for squeezing over.

                        Enjoy:

                          - This dish pairs wonderfully with tacos, over rice, or in a fresh salad. Enjoy the burst of flavor!
