Zesty Pineapple Chicken Quesadillas

2 cups cooked chicken, shredded

1 cup fresh pineapple, diced

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

1/2 red bell pepper, diced

1/2 green bell pepper, diced

1 small red onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon soy sauce

1 tablespoon lime juice

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper, to taste

4 large flour tortillas

Fresh cilantro, chopped (for garnish)

Salsa or sour cream (for serving)

Instructions
 

Prepare the Chicken Mixture: In a skillet over medium heat, add the olive oil. Once hot, sauté the diced red onion and garlic until fragrant and the onion is translucent, about 3-4 minutes.

    Add Vegetables and Chicken: Stir in the diced red and green bell peppers, and cook for another 2-3 minutes until slightly softened. Add the shredded chicken, diced pineapple, soy sauce, lime juice, chili powder, cumin, and season with salt and pepper. Mix well and sauté for about 5 minutes until heated through.

      Assemble the Quesadillas: Place a large flour tortilla in the skillet over medium heat. On one half of the tortilla, sprinkle a layer of Monterey Jack cheese, followed by a generous scoop of the chicken-pineapple mixture, and top with a layer of cheddar cheese. Fold the tortilla in half to cover the filling.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and crispy. Carefully flip the quesadilla and cook for an additional 3-4 minutes on the other side, until the cheese is melted and the tortilla is golden.

          Repeat and Serve: Remove the cooked quesadilla from the skillet and let it rest for a minute. Repeat the process with the remaining tortillas and filling. Cut each quesadilla into wedges and garnish with fresh cilantro. Serve with salsa or sour cream on the side.
