Zesty Italian Veggie Sandwich

1 large ciabatta roll or focaccia bread

1/2 cup roasted red peppers, sliced

1/2 cup zucchini, thinly sliced and grilled

1/2 cup eggplant, thinly sliced and grilled

1/2 cup fresh mozzarella cheese, sliced

1 cup fresh arugula

1/4 cup basil pesto

1 tablespoon balsamic glaze

1 tablespoon olive oil

Salt and pepper, to taste

Optional: Sliced black olives or artichoke hearts for extra flavor

Instructions
 

Prepare the Bread: Slice the ciabatta roll or focaccia in half horizontally, and lightly toast it on a grill or skillet until golden brown. This enhances the flavor and adds a nice crunch.

    Grill Veggies: Brush the zucchini and eggplant slices with olive oil, and sprinkle with salt and pepper. Preheat your grill or grill pan, and cook the vegetables for about 3-4 minutes on each side until they are soft and have grill marks. Remove from heat.

      Layer Ingredients: Spread a generous tablespoon of basil pesto on the inside of both halves of the toasted bread. On the bottom half, layer the grilled zucchini, eggplant, and roasted red peppers evenly.

        Add Cheese and Greens: Place slices of fresh mozzarella cheese over the veggies. Top with fresh arugula to add a peppery bite.

          Drizzle and Finish: Drizzle balsamic glaze over the arugula for added sweetness and tang. If using, add sliced olives or artichoke hearts on top for extra flavor.
