1 cup buffalo sauce (store-bought or homemade)

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 medium tomato, diced

1/2 cup shredded carrots

1/2 cup ranch or blue cheese dressing (optional, for drizzling)

Fresh cilantro or parsley, for garnish

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a mixing bowl, whisk together flour, water, garlic powder, smoked paprika, cayenne pepper, and salt until smooth. The batter should be thick enough to coat the cauliflower florets.

      Coat Cauliflower: Dip each cauliflower floret into the batter, ensuring they're completely covered, and then place them onto the prepared baking sheet in a single layer.
