Watermelon Kiwi Layered Pops

Ingredients
  

4 cups of seedless watermelon, cubed

3 ripe kiwis, peeled and sliced

1 cup coconut water (or coconut milk for creamier pops)

2 tablespoons honey (or agave syrup for a vegan option)

1 tablespoon lime juice

A pinch of salt

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Watermelon Layer:

    - In a blender, combine the cubed watermelon, coconut water (or coconut milk), honey, lime juice, and a pinch of salt. Blend until smooth.

      - Pour the watermelon mixture into popsicle molds, filling them about halfway. Leave some space at the top for the kiwi layer. Insert sticks and place the molds in the freezer for about 2 hours, or until partially frozen.

        Prepare the Kiwi Layer:

          - While the watermelon layer is freezing, blend the sliced kiwis with a splash of coconut water until smooth. If needed, you can add a little honey for sweetness to taste.

            - After 2 hours, remove the molds from the freezer and carefully pour the kiwi mixture over the frozen watermelon layer, filling the molds to the top. Insert the sticks back in and return the molds to the freezer.

              Freeze Until Solid:

                - Allow the pops to freeze for at least an additional 4-6 hours, or until completely solid.

                  Unmold and Serve:

                    - To unlock the pops, run warm water over the outside of the molds for a few seconds. Gently pull the pops out.

                      - Garnish with fresh mint leaves if desired and serve immediately!
