Ingredients

4 cups fresh arugula, washed and dried

2 cups seedless watermelon, diced into 1-inch cubes

½ cup feta cheese, crumbled

¼ cup red onion, thinly sliced

¼ cup toasted walnuts, roughly chopped

¼ cup balsamic glaze

3 tablespoons extra-virgin olive oil

Salt and pepper to taste

1 tablespoon fresh mint leaves, chopped (optional for garnish)

Instructions

Prepare the Ingredients: Start by washing and drying the arugula thoroughly. Cut the watermelon into 1-inch cubes and thinly slice the red onion. Chop the toasted walnuts if they are not already chopped.

Assemble the Salad: In a large salad bowl, combine the arugula, diced watermelon, sliced red onion, and chopped walnuts. Gently toss the ingredients together to distribute evenly.

Add the Feta: Sprinkle the crumbled feta cheese over the salad, taking care not to break it up too much.

Dress the Salad: In a small bowl, whisk together the balsamic glaze and extra-virgin olive oil. Drizzle this dressing over the salad. Toss everything gently to coat the salad without bruising the arugula or watermelon.

Season to Taste: Add salt and pepper to your liking. Toss gently once more.

Garnish and Serve: If desired, sprinkle fresh chopped mint leaves on top for an extra burst of flavor. Serve immediately to enjoy the freshness!
