Ingredients

For the Oatmeal Base:

2 cups rolled oats

2 ½ cups milk (dairy or non-dairy)

1/4 cup brown sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 cup chopped pecans or walnuts (optional)

For the Cinnamon Swirl:

1/3 cup brown sugar

2 tablespoons ground cinnamon

2 tablespoons melted butter (or coconut oil for dairy-free)

For Topping:

1/2 cup raisins or dried cranberries (optional)

Maple syrup for drizzling

Additional chopped nuts for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with butter or cooking spray.

Prepare the Oatmeal Mixture: In a large mixing bowl, combine rolled oats, milk, brown sugar, eggs, vanilla extract, baking powder, ground cinnamon, and salt. Stir until all ingredients are well mixed.

Prepare the Cinnamon Swirl: In a small bowl, mix together the brown sugar, ground cinnamon, and melted butter. Stir until it forms a thick paste.

Layer the Oatmeal: Pour half of the oatmeal mixture into the prepared baking dish, spreading it evenly. Use a spoon to dollop half of the cinnamon swirl mixture on top, creating little pockets of cinnamon goodness.

Add Remaining Oatmeal: Pour the remaining oatmeal mixture over the top and then swirl in the rest of the cinnamon mixture. Use a knife or spatula to create a marbled effect throughout the dish.

Add Optional Toppings: If using, sprinkle raisins or dried cranberries evenly on top, along with any extra nuts.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes or until the top is set and lightly golden.

Cool and Serve: Let the baked oatmeal cool for about 10 minutes before slicing into squares. Drizzle with maple syrup and additional nuts if desired.

Enjoy: Serve warm as a delicious breakfast or a delightful snack!
