Ingredients

2 cups rolled oats

2 ½ cups almond milk (or any milk of choice)

2 medium apples, peeled, cored, and diced (preferably Granny Smith or Honeycrisp)

1/2 cup brown sugar or coconut sugar

1/4 cup maple syrup

1/4 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/2 teaspoon salt

1/2 cup raisins or chopped nuts (walnuts or pecans)

1 tablespoon chia seeds (optional for added nutrition)

1 tablespoon butter or coconut oil (for greasing)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x9 inch baking dish with butter or coconut oil.

Prepare the Oats: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, nutmeg, chia seeds, and salt. Mix well to ensure even distribution of the dry ingredients.

Mix Wet Ingredients: In another bowl, whisk together the almond milk, applesauce, brown sugar, maple syrup, and vanilla extract until smooth and well combined.

Combine Ingredients: Pour the wet mixture into the dry ingredients and stir until fully combined. Gently fold in the diced apples and raisins or nuts, ensuring that everything is evenly mixed.

Pour into Baking Dish: Transfer the oatmeal mixture into the prepared baking dish, spreading it out evenly.

Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the mixture is set and a little golden on top.

Cool and Serve: Once baked, remove the dish from the oven and let it cool for about 5-10 minutes. Serve warm, optionally drizzled with additional maple syrup or a dollop of yogurt for added creaminess.

Storage Tip: Leftovers can be stored in an airtight container in the refrigerator for up to 5 days and can easily be reheated in the microwave.
