  • 0.45 pound turkey breast, thinly sliced
  • 2.0 cups new potatoes, quartered
  • 1.0 tablespoon olive oil
  • 1.0 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.0 tablespoon fresh sage, finely chopped
  • 4.0 sub rolls sub rolls
  • 1.0 cup fresh spinach leaves
  • 0.5 cup mozzarella cheese, shredded
  • 2.0 tablespoons mayonnaise
  • 2.0 teaspoons Dijon mustard

Instructions
 

  • Prepare the Potatoes: In a medium pot, bring salted water to a boil. Add the quartered new potatoes and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  • Sauté the Turkey: In a large skillet, heat the olive oil over medium heat. Add the sliced turkey breast and season with salt, pepper, and fresh sage. Cook until the turkey is heated through and lightly browned, about 5-7 minutes.
  • Mash the Potatoes: In a bowl, mash the cooked new potatoes with a fork until slightly chunky. Stir in a pinch of salt and pepper to taste.
  • Assemble the Sub: Slice the sub rolls lengthwise without cutting completely through. Spread a layer of mayonnaise on one side and Dijon mustard on the other. Add a generous scoop of the mashed potatoes into each sub.
  • Layer Ingredients: Top the mashed potatoes with the sautéed turkey and sprinkle with shredded mozzarella cheese. If using, add layers of fresh spinach, sliced tomatoes, and pickles for added flavor and crunch.
  • Toast the Subs (Optional): Preheat your oven to 375. Place the assembled subs on a baking sheet and toast in the oven for about 5-10 minutes, or until the bread is crispy and the cheese is melted.
  • Serve: Remove from the oven and allow to cool slightly. Cut in half if desired, and serve warm.
