1/4 cup cold unsalted butter, diced

3-4 tablespoons cold water

2 medium ripe tomatoes, sliced

1 cup fresh corn kernels (or 1 can of corn, drained)

1 cup shredded mozzarella cheese

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1 egg, beaten (for egg wash)

Fresh basil leaves for garnish

Make the Dough: In a large mixing bowl, combine the all-purpose flour, salt, and black pepper. Add the cold diced butter and, using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

    Add Water: Gradually mix in the cold water, one tablespoon at a time, until the dough comes together. Form it into a disc, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

      Preheat the Oven: Preheat your oven to 400°F (200°C) while the dough is chilling.
