For the Tofu Skewers:

14 oz (400g) firm tofu, drained and pressed

2 tablespoons soy sauce

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

1 red bell pepper, cut into 1-inch squares

1 zucchini, sliced into thick rounds

8-10 skewers (if using wooden skewers, soak them in water for 30 minutes)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1 small red onion, finely chopped

1 jalapeño, finely chopped (seeds removed for less heat)

2 tablespoons fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Prepare the Tofu:

    - Begin by cutting the pressed tofu into 1-inch cubes. In a medium bowl, combine soy sauce, olive oil, garlic powder, smoked paprika, black pepper, and salt. Add the tofu cubes and gently toss to coat. Allow it to marinate for at least 30 minutes for the flavors to develop.

      Make the Strawberry Salsa:

        - In a mixing bowl, combine the diced strawberries, red onion, jalapeño, cilantro, and lime juice. Stir gently to mix everything well. Season with salt and pepper to taste. Set aside to allow the flavors to meld while preparing the skewers.

          Assemble the Skewers:

            - Preheat a grill or grill pan over medium heat. Thread the marinated tofu cubes, bell pepper squares, and zucchini rounds onto the skewers, alternating between the ingredients for a colorful presentation.

              Grill the Skewers:

                - Lightly oil the grill grates. Place the skewers on the preheated grill and cook for about 10-12 minutes, turning occasionally, until the tofu is golden and the vegetables are tender and slightly charred.

                  Serve:
