Tini’s “Surprise-Ingredient” Mac & Cheese

8 oz elbow macaroni

4 cups shredded sharp cheddar cheese (divided)

2 cups whole milk

1 cup heavy cream

1/2 cup grated Parmesan cheese

1/4 cup unsalted butter

1/4 cup all-purpose flour

1 tsp Dijon mustard

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp smoked paprika

1/4 tsp cayenne pepper (optional for heat)

Salt and pepper to taste

Surprise Ingredient: 1 cup roasted butternut squash puree

1/2 cup panko breadcrumbs

2 tbsp olive oil

Fresh parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook until al dente according to package directions, about 6-8 minutes. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Whisk in flour and cook for about 1-2 minutes, stirring constantly until it forms a roux (a paste), without browning.

      Add Liquids: Gradually whisk in the whole milk and heavy cream. Continue whisking until the mixture is smooth and starts to thicken, about 5-7 minutes.

        Incorporate Cheeses and Flavorings: Stir in 3 cups of the sharp cheddar cheese, Parmesan cheese, Dijon mustard, garlic powder, onion powder, smoked paprika, and cayenne pepper. Mix until the cheese is completely melted and the sauce is creamy.
