In a large bowl, combine the ground turkey, chopped cranberries, breadcrumbs, red onion, parsley, garlic powder, thyme, salt, pepper, and Dijon mustard. Mix well until all ingredients are evenly incorporated.
Divide the turkey mixture into 4 equal portions and shape each portion into a patty, about 0.75 inches thick. Make a slight indentation in the center of each patty to prevent them from puffing up while cooking.
Heat a grill or large skillet over medium heat. Add olive oil to the skillet if using.
Place the patties on the grill or in the skillet. Cook for about 5-6 minutes on one side, then flip and cook for another 5-6 minutes on the other side, or until they reach an internal temperature of 165°F (75°C).
If using pepper jack cheese, place a slice on each patty during the last minute of cooking and cover to allow the cheese to melt.
Toast the whole grain burger buns, if desired. Layer each bottom bun with a lettuce leaf, place the turkey burger patty on top, add a few slices of avocado, and finish with a generous spoonful of cranberry sauce.
Cap with the top bun and serve immediately, enjoying the festive flavors that highlight the Thanksgiving spirit!
