Thai Cucumber Noodle Salad

2 large cucumbers

1 large carrot, julienned

1 red bell pepper, thinly sliced

1 cup shredded red cabbage

1/4 cup chopped fresh cilantro

1/4 cup chopped peanuts (or cashews)

2 green onions, sliced

1/4 cup fresh mint leaves

1 tablespoon sesame seeds

For the Dressing:

3 tablespoons peanut butter

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon lime juice

1 tablespoon honey or maple syrup

1 teaspoon sesame oil

1 small garlic clove, minced

1/2 teaspoon red pepper flakes (adjust for spice preference)

Water (to thin the dressing, if necessary)

Instructions
 

Prepare the Cucumbers: Using a spiralizer, create noodles from the cucumbers. If you don’t have a spiralizer, you can thinly slice the cucumbers into ribbons using a vegetable peeler. Place the cucumber noodles in a colander and sprinkle with a little salt (this will draw out excess moisture). Let them sit for about 10-15 minutes, then rinse and pat them dry with a paper towel.

    Mix the Veggies: In a large mixing bowl, combine the cucumber noodles, julienned carrot, sliced red bell pepper, shredded red cabbage, chopped cilantro, sliced green onions, and mint leaves. Toss everything together until well combined.

      Make the Dressing: In a separate bowl, whisk together the peanut butter, soy sauce, lime juice, honey (or maple syrup), sesame oil, minced garlic, and red pepper flakes until smooth and creamy. If the dressing is too thick, whisk in a tablespoon of water at a time until you reach your desired consistency.
