Teriyaki Tofu Rice Wraps

Ingredients
  

1 block (14 oz) firm tofu, pressed and drained

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup (for a vegan option)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon minced ginger

1 teaspoon minced garlic

1 cup cooked jasmine or basmati rice

1 cup shredded carrots

1 cup cucumber, julienned

1 bell pepper, sliced (any color)

1 avocado, sliced

4 large rice paper wrappers

Fresh cilantro or green onions, for garnish

Sesame seeds, for garnish

Lime wedges, for serving

Instructions
 

Marinate the Tofu:

    Cut the pressed tofu into thin slices or cubes. In a bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, ginger, and garlic to create the teriyaki marinade. Add the tofu to the bowl, making sure each piece is well-coated. Let it marinate for at least 30 minutes.

      Cook the Tofu:

        Heat a non-stick skillet over medium-high heat. Add the marinated tofu pieces (reserve the marinade) and cook for 5-7 minutes, turning halfway through, until golden-brown and slightly crispy. Pour the reserved marinade into the skillet and cook for an additional 2-3 minutes, allowing the sauce to thicken slightly. Remove from heat and set aside.

          Prepare Rice Paper Wrappers:

            Fill a shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds, or until it becomes pliable. Lay it flat on a clean surface.

              Assemble the Wraps:

                In the center of the moistened rice paper, place a small scoop of cooked rice (about 1/4 cup), followed by a few slices of cooked teriyaki tofu, shredded carrots, cucumber, bell pepper, and avocado. Be careful not to overfill, as you'll need to roll the wraps.

                  Wrap it Up:

                    Fold the sides of the rice paper over the filling, then roll from the bottom up to secure the filling tightly, like a burrito. Repeat this process for the remaining rice paper wrappers and filling.

                      Serve:

                        Arrange the wraps on a serving platter. Garnish with chopped cilantro or green onions, and sprinkle sesame seeds on top. Serve with lime wedges on the side for an extra zing.
