Teriyaki Glazed Meatball Skewers

1 lb ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs

1/4 cup green onions, finely chopped

1/4 cup grated pineapple (to add moisture and sweetness)

1 large egg

1 tbsp soy sauce

1 tsp garlic powder

1 tsp ginger powder

1/2 tsp salt

1/4 tsp black pepper

1 cup teriyaki sauce

1 tbsp sesame seeds (for garnish)

Wooden skewers (soaked in water for 30 minutes to prevent burning)

Instructions
 

Prepare the Meatballs: In a large bowl, combine the ground beef, breadcrumbs, green onions, grated pineapple, egg, soy sauce, garlic powder, ginger powder, salt, and black pepper. Mix until just combined; avoid overmixing to keep the meatballs tender.

    Shape the Meatballs: Use your hands to shape the mixture into 1-inch meatballs and place them on a baking sheet lined with parchment paper.

      Prepare the Skewers: Thread the meatballs onto the soaked wooden skewers, leaving a little space between each meatball to allow for even cooking.

        Preheat the Grill/Oven: Preheat your grill to medium-high heat or your oven to 400°F (200°C).

          Cook the Skewers: If grilling, place the skewers directly on the grill. Cook for about 10-12 minutes, turning occasionally, until the meatballs are cooked through and have a nice char. If baking, place the skewers on a baking sheet and bake for 20-25 minutes, flipping halfway through.

            Glaze with Teriyaki Sauce: In the last 5 minutes of cooking, brush the meatballs generously with teriyaki sauce. Allow the glaze to caramelize slightly for added flavor.

              Serve: Once cooked, remove the meatball skewers from the grill/oven. Sprinkle with sesame seeds and extra green onions if desired. Serve warm with additional teriyaki sauce on the side for dipping.
