2 cups rolled oats

2 cups almond milk (or any milk of choice)

1/4 cup maple syrup or honey (for a vegan option)

1 tsp vanilla extract

1/2 tsp cinnamon

1/4 tsp salt

1 1/2 cups fresh strawberries, hulled and diced

1/4 cup chopped nuts (optional, e.g., almonds or walnuts)

1/4 cup shredded coconut (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line it with paper liners.

    In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, and salt. Stir until well combined and let it sit for about 10 minutes. This allows the oats to absorb some of the liquid.

      Gently fold in the diced strawberries (reserve a few for topping) along with the chopped nuts and shredded coconut if using.

        Spoon the oat mixture evenly into the muffin tin, filling each cup about 3/4 full. Top each cup with a few additional strawberry pieces for decoration.

          Bake in the preheated oven for 25-30 minutes, or until the oat cups are firm and the tops are lightly golden.

            Remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
