Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup fresh pineapple, diced (or canned, drained)

1 red bell pepper, thinly sliced

1 small red onion, thinly sliced

2 tablespoons olive oil

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sriracha (adjust for heat preference)

1 teaspoon ground ginger

1 teaspoon garlic powder

Salt and pepper to taste

4 large whole wheat or spinach wraps

1 cup mixed greens (like spinach and arugula)

Optional toppings: chopped cilantro, lime wedges, and sesame seeds

Instructions

Marinate the Chicken: In a mixing bowl, combine the cooked shredded chicken, soy sauce, honey, sriracha, ground ginger, garlic powder, salt, and pepper. Mix well to ensure the chicken is evenly coated in the marinade. Let it sit for at least 15 minutes to absorb the flavors.

Sauté the Vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced red bell pepper and red onion, and sauté for about 3-5 minutes, until they are soft but still slightly crunchy. Remove from heat and set aside.

Cook the Chicken: In the same skillet, add the marinated chicken with any leftover marinade. Cook on medium heat for about 5-6 minutes, stirring occasionally until heated through and slightly caramelized.

Assemble the Wraps: Lay the whole wheat or spinach wraps on a flat surface. Start by adding a handful of mixed greens to each wrap, followed by the sautéed vegetables and the sweet and spicy chicken mixture. Top with diced pineapple and any optional toppings of cilantro, lime wedges, or sesame seeds.

Wrap it Up: Fold in the sides of the wrap, then roll from the bottom up to encase the fillings. Cut each wrap in half diagonally for easy eating.

Serve: Enjoy immediately with a slice of lime to squeeze over your wraps for an extra zing, or chill them in the fridge for a refreshing meal on the go.
