1 cup almond flour

1/2 cup unsweetened shredded coconut

1/4 cup coconut oil (melted)

2 tablespoons maple syrup

1/4 teaspoon salt

For the Raspberry Layer:

1 cup fresh or frozen raspberries

2 tablespoons honey or agave syrup

1 tablespoon cornstarch

1 tablespoon lemon juice

For the Coconut Topping:

1 cup unsweetened shredded coconut

1/4 cup coconut cream (or full-fat coconut milk)

1 tablespoon vanilla extract

Instructions
 

Prepare the Base:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine almond flour, shredded coconut, melted coconut oil, maple syrup, and salt. Mix until well incorporated and a crumbly dough forms.

        - Press the mixture evenly into the bottom of a greased 8x8 inch (20x20 cm) baking dish. Bake for 10 minutes, until lightly golden. Remove from the oven and let cool slightly.

          Make the Raspberry Layer:

            - In a saucepan over medium heat, combine raspberries, honey (or agave syrup), cornstarch, and lemon juice. Stir gently until the raspberries break down and the mixture thickens, about 5-7 minutes. Remove from the heat.

              - Pour the raspberry mixture over the cooled coconut base, spreading it evenly.

                Prepare the Coconut Topping:

                  - In a bowl, combine shredded coconut, coconut cream, and vanilla extract. Mix until combined.

                    - Spoon the coconut mixture over the raspberry layer, pressing it down gently to create an even topping.

                      Bake:

                        - Return the dish to the oven and bake for an additional 15 minutes. The coconut topping should be golden and slightly crispy.
