8 oz whole wheat pasta (penne or fusilli works best)

1 medium sweet potato, peeled and diced into small cubes

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes with green chilies

2 cups vegetable broth

2 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh cilantro or parsley, for garnish

Grated cheese (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add olive oil. Once hot, add diced onion and sauté for about 2-3 minutes until it starts to become translucent. Add minced garlic and diced bell pepper; cook for another 2-3 minutes until softened.

      Add Sweet Potatoes: Stir in the diced sweet potatoes. Cook for about 5-7 minutes, stirring occasionally, until they begin to soften.

        Spice it Up: Sprinkle in the chili powder, cumin, smoked paprika, salt, and pepper. Mix well to coat the vegetables with the spices.

          Incorporate Liquids: Pour in the vegetable broth and add the can of diced tomatoes with green chilies. Bring the mixture to a gentle simmer and cook until the sweet potatoes are tender (about 10 minutes).

            Combine with Beans and Pasta: Once the sweet potatoes are cooked through, add the black beans and cooked pasta to the skillet. Stir everything together until well combined and heated through. Adjust seasonings to taste.
