Sweet Potato Avocado Breakfast Toast

1 medium sweet potato

2 slices of whole-grain bread (or gluten-free bread)

1 ripe avocado

1 tablespoon of olive oil

1 teaspoon of chili powder (or to taste)

Salt and pepper, to taste

1 tablespoon of lemon juice

Optional toppings: sliced radishes, cherry tomatoes, microgreens, feta cheese, or poached egg

Instructions
 

Prepare the Sweet Potato: Preheat your oven to 400°F (200°C). Wash and scrub the sweet potato thoroughly, then prick it a few times with a fork. Wrap it in aluminum foil and bake for about 45-60 minutes or until tender. Alternatively, you can peel and cube the sweet potato and boil it in salted water for about 15-20 minutes until tender.

    Toast the Bread: While the sweet potato is baking, toast the slices of whole-grain bread until they are golden brown and crisp. You can use a toaster or place them on a baking sheet in the oven for about 5-7 minutes.

      Prepare the Avocado: In a bowl, mash the ripe avocado with a fork until creamy. Add lemon juice, chili powder, salt, and pepper to taste, and mix well.

        Assemble the Toast: Once the sweet potato is cool enough to handle, slice it in half lengthwise and scoop out some flesh to create a well for the avocado. You can mix some of the sweet potato flesh into the avocado mix for enhanced flavor, or save it for another recipe.

          Spread and Top: Spread a generous layer of the avocado mixture onto each slice of toasted bread. Top with slices of the baked sweet potato.
