2 medium sweet potatoes, peeled and diced into 1-inch cubes

1 pound ground turkey

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

2 tablespoons olive oil

1 cup baby spinach

1/4 cup chicken broth (or vegetable broth)

Fresh cilantro for garnish (optional)

Lime wedges for serving

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and pepper. Sauté for about 10 minutes, stirring occasionally, until the sweet potatoes are tender and slightly caramelized. Remove from the skillet and set aside.

    Cook the Turkey: In the same skillet, add the remaining tablespoon of olive oil. Add the diced onion and garlic, cooking for about 3 minutes until the onion is translucent. Add the ground turkey, breaking it up with a spatula. Cook for about 8-10 minutes until completely cooked through and browned.

      Season and Combine: Stir in the bell pepper, smoked paprika, cumin, and chili powder. Mix well to coat the turkey. Pour in the chicken broth to create a little steam and flavor infusion. Let it simmer for about 2 minutes.

        Add Sweet Potatoes: Return the sweet potatoes to the skillet and add the baby spinach. Stir until the spinach wilts, which should take about 1-2 minutes. Adjust seasoning with more salt and pepper if necessary.

          Garnish and Serve: Remove from heat, sprinkle with fresh cilantro if desired, and serve with lime wedges on the side. Enjoy it warm!
