Ingredients
  

2 medium sweet potatoes

1 ripe avocado

2 slices of whole-grain bread

1 tablespoon olive oil

1 teaspoon garlic powder

½ teaspoon smoked paprika

Salt and pepper to taste

½ lime, juiced

Optional toppings: microgreens, red pepper flakes, sesame seeds, or feta cheese

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly. Cut them in half lengthwise, and then into wedges or rounds as desired. Place them on a baking sheet.

      Season the Sweet Potatoes: Drizzle the sweet potatoes with olive oil, and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss until evenly coated.

        Roast the Sweet Potatoes: Roast in the preheated oven for 25-30 minutes, or until they are tender and slightly golden, turning halfway through for even cooking.

          Toast the Bread: While the sweet potatoes are roasting, toast the slices of whole-grain bread until golden brown.

            Prepare the Avocado: Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Add lime juice, and mash with a fork to your desired consistency. Season with salt and pepper.

              Assemble the Toast: Once the sweet potatoes are done, spread the mashed avocado generously on each slice of toast.

                Top the Toast: Add the roasted sweet potato slices on top of the avocado spread.

                  Add Optional Toppings: If desired, sprinkle with microgreens, red pepper flakes, sesame seeds, or crumbled feta cheese for an extra layer of flavor.
