1 cup raw pistachios, shelled

1 cup pitted dates, packed

¼ cup shredded coconut (unsweetened)

2 tablespoons rose water

2 tablespoons honey or maple syrup (for a vegan option)

¼ teaspoon sea salt

2 tablespoons chia seeds

1 teaspoon vanilla extract

Optional: Edible rose petals and extra chopped pistachios for garnish

Prep the Pistachios: If desired, toast your raw pistachios in a dry skillet over medium heat for 5-7 minutes until fragrant, then allow to cool. This step enhances the nutty flavor.

    Blend Ingredients: In a food processor, combine the cooled pistachios, pitted dates, shredded coconut, rose water, honey or maple syrup, sea salt, chia seeds, and vanilla extract. Pulse until the mixture becomes a sticky dough, stopping to scrape down the sides as necessary.

      Check Consistency: If the mixture is too crumbly, add a teaspoons of water until it holds together well. It should be sticky but manageable.

        Shape the Bites: Use your hands to grasp a small portion of the mixture and roll it into balls about the size of a tablespoon. Repeat until all the mixture is formed into energy bites.

          Chill: Place the energy bites on a baking sheet lined with parchment paper and pop them into the refrigerator for at least 30 minutes to firm up.
