Ingredients

2 ripe mangoes, peeled and diced

1 cup plain Greek yogurt (or dairy-free yogurt for a vegan option)

1/4 cup honey or maple syrup (adjust based on sweetness preference)

1/2 teaspoon vanilla extract

1/2 cup coconut milk (or any milk of choice)

A pinch of salt

Optional garnish: shredded coconut or mint leaves

Instructions

Prepare the Mangoes: Start by peeling and dicing the ripe mangoes. Make sure to select mangoes that are vibrant yellow and fragrant for the best flavor.

Blend the Mixture: In a blender, combine the diced mangoes, Greek yogurt, honey (or maple syrup), vanilla extract, coconut milk, and a pinch of salt. Blend until the mixture is smooth and creamy, ensuring all ingredients are well incorporated.

Taste and Adjust: Before moving on, taste your mango yogurt mixture. If you'd like it sweeter, add more honey or maple syrup as desired, and blend again.

Pour into Molds: Carefully pour the mango yogurt mixture into your popsicle molds, leaving a little space at the top for expansion. If using popsicle sticks, insert them gently into the molds.

Freeze: Place the molds in the freezer and allow them to freeze for at least 4-6 hours or until completely solid.

Unmold the Popsicles: To remove the popsicles, run warm water over the outside of the molds for a few seconds. This will help release them smoothly. Gently tug on the sticks to pull out the popsicles.

Serve: For an extra tropical touch, roll the popsicles in shredded coconut or garnish with fresh mint leaves before serving. Enjoy your refreshing treat on a hot day!
