1 cup Medjool dates, pitted

1 cup rolled oats

1 cup shredded unsweetened coconut

1/2 cup almond butter (or any nut butter of choice)

1/4 cup honey or maple syrup

1/2 tsp vanilla extract

1/4 tsp sea salt

1/4 cup chopped nuts (e.g., almonds or walnuts) for added crunch (optional)

1/4 cup dark chocolate chips (optional, for a sweet touch)

Instructions
 

Prepare the Base: In a food processor, place the pitted Medjool dates and process until they form a thick paste. Scrape down the sides as needed to ensure all dates are blended well.

    Mix Ingredients: Add the rolled oats, shredded coconut, almond butter, honey or maple syrup, vanilla extract, and sea salt to the food processor. If you’re adding chopped nuts or dark chocolate chips, include them at this stage too. Pulse until all ingredients are well combined and form a sticky dough.

      Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later.

        Press and Shape: Transfer the mixture into the lined baking dish. Using your hands or a spatula, press the mixture firmly and evenly into the pan to create a compact layer.

          Chill: Cover the pan with plastic wrap or a lid and refrigerate for at least 1-2 hours to allow the energy squares to firm up.
