Sweet Chocolate Banana Pudding

2 ripe bananas, sliced

1 cup semi-sweet chocolate chips

2 cups whole milk

1/2 cup granulated sugar

1/4 cup unsweetened cocoa powder

1/3 cup cornstarch

1/4 teaspoon salt

1 teaspoon vanilla extract

1 cup heavy cream

2 tablespoons powdered sugar

Chocolate shavings or cocoa powder, for garnish

Instructions
 

In a medium saucepan, whisk together the sugar, cocoa powder, cornstarch, and salt. Gradually add the whole milk, whisking to combine until smooth.

    Place the saucepan over medium heat and stir continuously until the mixture thickens and begins to bubble, about 8-10 minutes. Once thick, remove from heat.

      Stir in the chocolate chips and vanilla extract until the chocolate is completely melted and the mixture is smooth. Set aside to cool slightly.

        In a separate bowl, whip the heavy cream and powdered sugar together until soft peaks form. This will be your light and fluffy topping.

          In a 9x9 inch serving dish or individual cups, layer the banana slices on the bottom. Pour half of the chocolate mixture over the bananas, then add another layer of banana slices, followed by the remaining chocolate pudding.

            Finish with a generous layer of the whipped cream on top. You can use a spatula for smoothness or pipe it on for decoration.

              Chill in the refrigerator for at least 2 hours to allow the flavors to meld and the pudding to set.
