1 lb fresh salmon fillet

2 tablespoons sweet chili sauce

1 tablespoon soy sauce

1 tablespoon olive oil

1 teaspoon grated ginger

2 garlic cloves, minced

1 tablespoon lime juice

Salt and pepper to taste

1 head of butter or romaine lettuce, leaves separated

1 red bell pepper, thinly sliced

1 avocado, sliced

1/4 cup fresh cilantro, chopped

1/4 cup scallions, chopped

Lime wedges for serving

Instructions
 

Marinate the Salmon: In a bowl, whisk together the sweet chili sauce, soy sauce, olive oil, grated ginger, minced garlic, lime juice, salt, and pepper. Place the salmon fillet in a shallow dish and pour the marinade over it. Cover and refrigerate for at least 30 minutes, allowing the flavors to meld.

    Cook the Salmon: Preheat a grill or skillet over medium-high heat. Remove the salmon from the marinade (reserving the marinade) and cook for about 4-5 minutes on each side, or until the salmon flakes easily with a fork. Brush with the reserved marinade halfway through cooking for extra flavor. Once cooked, remove from heat and let cool slightly.

      Prepare the Lettuce Wraps: While the salmon is cooling, wash the lettuce leaves and pat them dry. Lay them out on a serving platter.

        Assemble the Wraps: Flake the cooked salmon into bite-sized pieces and place a portion onto the center of each lettuce leaf. Top with sliced red bell peppers, avocado, chopped cilantro, and scallions.
