Ingredients

2 large flour tortillas

1 large apple (any variety you prefer), peeled and diced

1/4 cup brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1/4 cup cream cheese, softened

2 tablespoons honey

1/4 cup chopped walnuts or pecans (optional)

Cooking spray or melted butter for brushing

Instructions

Prepare the Apple Filling: In a medium bowl, combine the diced apple, brown sugar, cinnamon, and lemon juice. Toss until the apples are evenly coated. Let the mixture sit for about 10 minutes to allow the flavors to meld.

Make the Cream Cheese Mixture: In another bowl, whisk together the softened cream cheese and honey until smooth and creamy. Set aside.

Assemble the Roll-Ups: Lay out one flour tortilla on a flat surface. Spread half of the cream cheese mixture evenly over the tortilla, leaving a small border around the edges.

Add the Apple Filling: On top of the cream cheese layer, spoon half of the apple filling, spreading it evenly over the tortilla. If desired, sprinkle half of the chopped nuts over the apples for added crunch.

Roll It Up: Starting from one end, carefully roll the tortilla tightly. Ensure it is well sealed at the edges. Repeat the same process with the second tortilla and remaining ingredients.

Cook the Roll-Ups: Preheat a skillet over medium heat and lightly grease it with cooking spray or melted butter. Place the roll-ups seam side down in the skillet. Cook for about 3-4 minutes on each side until golden brown and crispy.

Slice and Serve: Remove the roll-ups from the skillet and let them cool for a minute. Slice them into bite-sized pieces and pack them into school snack containers.

Optional Dipping Sauce: For an extra treat, pair the roll-ups with a small portion of caramel or yogurt for dipping!
