Ingredients

2 cups rolled oats

1 cup whole wheat flour

1/2 cup brown sugar, packed

1/2 cup unsalted butter, melted (or coconut oil for a dairy-free option)

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon salt

2 medium apples, peeled, cored, and finely chopped (preferably Granny Smith or Honeycrisp)

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8-inch baking dish or line it with parchment paper for easy removal.

Prepare the Crust Mixture: In a large bowl, combine the rolled oats, whole wheat flour, brown sugar, cinnamon, and salt. Mix well until combined.

Add Wet Ingredients: Pour in the melted butter (or coconut oil), honey (or maple syrup), and vanilla extract. Stir everything together until the mixture resembles a crumbly dough.

Reserve Some for Topping: Take about 1 cup of the mixture and set it aside. This will be used for the topping.

Mix the Apple Filling: In another bowl, add the finely chopped apples, and if using, the chopped nuts and dried fruit. Stir to combine.

Assemble the Bars: Press the remaining oat mixture firmly into the bottom of the prepared baking dish to form a solid crust. Spread the apple mixture evenly over the crust. Finally, crumble the reserved oat mixture over the apple filling for the topping.

Bake: Place the baking dish in the preheated oven and bake for 30–35 minutes, or until the topping is golden brown and the apples are tender.

Cool and Cut: Let the dish cool completely for about 15–20 minutes before lifting it out (if using parchment) and cutting into bars. Allow the bars to cool for an additional 30 minutes to firm up.

Serve and Enjoy: Enjoy the sweet apple crumble snack bars as a tasty treat for breakfast, lunch, or a grab-and-go snack!
