Sun-Dried Tomato and Spinach Pasta

12 oz (340 g) spaghetti or your choice of pasta

1 cup sun-dried tomatoes, packed in oil, drained and chopped

4 cups fresh spinach, roughly chopped

4 cloves garlic, minced

1 medium onion, finely chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Red pepper flakes (optional, for a spicy kick)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute, until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and oregano. Cook for another 2-3 minutes until the tomatoes are heated through.

        Incorporate Spinach: Gradually add the chopped spinach to the skillet. Sauté until it wilts and reduces in volume (about 2-3 minutes).

          Make the Sauce: Lower the heat and pour in the heavy cream, stirring to combine. Let it simmer for 2-3 minutes to thicken slightly. Add the grated Parmesan cheese and stir until melted and creamy. Season with salt, pepper, and red pepper flakes if using.

            Combine Pasta and Sauce: Add the cooked spaghetti to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, gradually add some of the reserved pasta water until you reach your desired consistency.
