2 ripe mangoes, peeled and diced

1 cup coconut milk (full fat for creaminess)

2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1 teaspoon fresh lime juice

1/4 teaspoon sea salt

Fresh mint leaves for garnish (optional)

Instructions
 

Blend the Base: In a blender, combine diced mangoes, coconut milk, honey (or maple syrup), lime juice, and sea salt. Blend until smooth and creamy, ensuring there are no chunks of mango left.

    Taste Test: Give the mixture a taste and adjust sweetness if necessary. If you prefer a sweeter popsicle, add a little more honey or syrup.

      Prepare Molds: Pour the mango-coconut mixture into popsicle molds, leaving a little space at the top as the mixture might expand when frozen.

        Insert Sticks: If your popsicle molds have a stick holder, insert the sticks into the center of each mold. If not, simply freeze the popsicles for about 1-2 hours until the mixture is partially frozen and then insert wooden sticks.

          Freeze: Place the molds in the freezer and allow them to freeze for at least 6 hours or until completely solid.

            Unmold: To remove the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out, and if they resist, run the water a bit longer.

              Serve: Decorate with fresh mint leaves for a pop of color, and enjoy your refreshing summer snack!
