Stuffed Fruit Pizza Bell Peppers

4 large bell peppers (any color)

1 cup cooked quinoa (or rice)

1 cup diced mixed fruits (pineapple, mango, strawberry, and kiwi)

1/2 cup cherry tomatoes, quartered

1/4 cup red onion, finely chopped

1/2 cup black beans, rinsed and drained

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

1/4 cup fresh cilantro, chopped

1 cup shredded mozzarella cheese

2 tablespoons olive oil

1 tablespoon honey or maple syrup (optional for sweetness)

Salt and pepper to taste

Lime wedges for serving

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare the Bell Peppers: Slice the tops off each bell pepper and remove the seeds and membranes. Lightly brush the outside of the peppers with olive oil and place them in a baking dish.

      Make the Filling: In a large mixing bowl, combine the cooked quinoa, diced mixed fruits, cherry tomatoes, red onion, black beans, chili powder, cumin, garlic powder, and chopped cilantro. If desired, drizzle in honey or maple syrup for a touch of sweetness. Season with salt and pepper and mix until well combined.

        Stuff the Peppers: Spoon the fruit and quinoa mixture generously into each prepared bell pepper. Press down gently to pack the filling.

          Add the Cheese: Top each stuffed pepper with shredded mozzarella cheese, ensuring it's evenly distributed across the tops.

            Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25-30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Serve: Once out of the oven, let the stuffed peppers cool for a few minutes. Serve warm with lime wedges on the side for an extra burst of flavor.
