2 ripe avocados

1 can (5 oz) tuna, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 tablespoon lemon juice

1 small celery stalk, finely diced

1/4 small red onion, finely diced

1/4 cup shredded cheddar cheese (or cheese of your choice)

Salt and pepper to taste

1/2 teaspoon garlic powder (optional)

4 slices of whole grain or sourdough bread

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Start by preheating your oven to 375°F (190°C).

    In a medium mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, and garlic powder (if using). Mix until well blended.

      Cut the avocados in half and remove the pit. Carefully scoop out a little of the flesh to create more space for the tuna filling, but ensure there's enough avocado left to hold the shape.

        Fold the shredded cheese into the tuna mixture, and then season with salt and pepper to taste.

          Spoon the tuna mixture into each avocado half generously.

            Place the stuffed avocados on a baking sheet and bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly.

              Meanwhile, toast the slices of bread until golden brown.

                Once the avocado tuna melts are done, remove them from the oven and allow them to cool slightly.

                  Serve each stuffed avocado on a slice of toasted bread. Garnish with fresh parsley or cilantro, if desired.
