1 lb (450g) ground chicken

2 tablespoons soy sauce

2 tablespoons honey

2 teaspoons sesame oil

3 cloves garlic, minced

1 inch ginger, grated

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 red bell pepper, finely diced

1 cup carrots, shredded

2 green onions, sliced

1 tablespoon sesame seeds (optional, for garnish)

1 head of iceberg or butter lettuce, leaves separated

Fresh cilantro, for garnish

Instructions
 

Prepare the Sauce: In a mixing bowl, combine soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and hoisin sauce. Whisk together until well blended. Set aside.

    Cook the Chicken: In a large skillet over medium-high heat, add a splash of oil (optional) and add the ground chicken. Cook for 5-7 minutes, breaking it apart with a spatula, until the chicken is browned and no longer pink.
