4 chicken sausages (spicy or mild, based on preference)

1 red onion, cut into wedges

2 cups Brussels sprouts, halved

1 cup cherry tomatoes, halved

2 medium sweet potatoes, peeled and cubed

3 tablespoons balsamic vinegar

2 tablespoons olive oil

2 tablespoons honey or maple syrup

2 teaspoons dried thyme (or 1 tablespoon fresh thyme, chopped)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prep the Vegetables: In a large mixing bowl, combine the Brussels sprouts, cherry tomatoes, red onion, and sweet potatoes. Drizzle with olive oil, season with salt, pepper, and thyme. Toss to evenly coat.

      Prepare the Sauce: In a small bowl, whisk together the balsamic vinegar and honey/maple syrup until well combined. Pour half of this mixture over the vegetables and toss to distribute.

        Arrange the Ingredients: Spread the seasoned vegetables evenly on a large baking tray. Nestle the chicken sausages among the vegetables.

          Add the Remaining Sauce: Drizzle the remaining balsamic mixture over the chicken sausages and vegetables for an extra layer of flavor.
