Spicy Grilled Chicken Flatbread

2 large chicken breasts

2 tablespoons olive oil

2 tablespoons lime juice

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon chili powder

1/2 teaspoon cayenne pepper (adjust based on spice preference)

Salt and pepper to taste

For the Flatbread:

2 large flatbreads (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup diced red onion

1/2 cup diced bell peppers (red and green)

1/4 cup fresh cilantro, chopped

1/2 cup avocado, sliced

For the Spicy Ranch Drizzle:

1/2 cup ranch dressing

1 tablespoon sriracha sauce (adjust based on spice preference)

1 teaspoon lime juice

Instructions
 

Marinate the Chicken: In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, smoked paprika, chili powder, cayenne pepper, salt, and pepper. Add the chicken breasts and coat well. Cover and let marinate in the refrigerator for at least 30 minutes (or up to overnight for more flavor).

    Prepare the Grill: Preheat your grill to medium-high heat. If using a grill pan, heat it on the stovetop.

      Grill the Chicken: Remove the chicken from the marinade and place it on the grill. Grill for about 6-7 minutes per side or until the internal temperature reaches 165°F (75°C). Once done, let it rest for a few minutes before slicing it into thin strips.

        Prepare the Flatbreads: While the chicken is grilling, mix the ranch dressing, sriracha, and lime juice in a small bowl to create your spicy ranch drizzle.

          Assemble the Flatbread: On each flatbread, sprinkle half of the shredded mozzarella. Layer with grilled chicken strips, diced red onion, and bell peppers. Top with the remaining mozzarella cheese.

            Grill the Flatbreads: Carefully place the assembled flatbreads on the grill (or grill pan). Grill for about 3-4 minutes or until the cheese is melted and the edges of the flatbreads are crispy.
