Spicy Chili Nachos

1 bag of tortilla chips (12 oz)

1 cup shredded sharp cheddar cheese

1 cup shredded pepper jack cheese

1 can (15 oz) chili (with or without beans, your choice)

1 small jalapeño, finely diced (remove seeds for less heat)

1/2 cup black olives, sliced

1/2 cup diced tomatoes

1/4 cup diced red onion

1/4 cup fresh cilantro, chopped

1/2 cup sour cream

1/4 cup salsa

1 teaspoon ground cumin

1 teaspoon chili powder

1/4 teaspoon cayenne pepper (optional, for extra spice)

Instructions
 

Preheat Oven: Begin by preheating your oven to 350°F (175°C).

    Prepare the Chili: In a small saucepan over medium heat, warm the canned chili, adding the ground cumin, chili powder, and cayenne pepper for an extra kick. Stir until well combined and heated through, about 5 minutes.

      Layer the Chips: On a large baking sheet, spread an even layer of tortilla chips to form the base of your nachos.

        Add the Toppings:

          - Spoon the warmed chili evenly over the tortilla chips.

            - Sprinkle the shredded sharp cheddar and pepper jack cheeses generously on top of the chili layer.

              - Scatter the diced jalapeños, black olives, diced tomatoes, and red onion across the nachos.

                Bake: Place the baking sheet in the preheated oven and bake for about 10-15 minutes, or until the cheese is melted and bubbly.

                  Garnish and Serve: Remove the nachos from the oven, and immediately garnish with freshly chopped cilantro. Serve with dollops of sour cream and salsa on the side for dipping.
