Spicy Baked Chicken Lettuce Wraps

Ingredients
  

1 lb ground chicken

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon grated ginger

1 small onion, finely chopped

1 bell pepper, finely chopped

2 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon Sriracha (adjust to taste)

1 tablespoon rice vinegar

1 tablespoon honey

1 teaspoon sesame oil

½ teaspoon black pepper

1 head of butter lettuce (or iceberg), leaves separated and washed

¼ cup chopped green onions (for garnish)

¼ cup chopped cilantro (for garnish)

Optional: chopped peanuts for crunch

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Sauté Vegetables: In a large skillet over medium heat, add olive oil. Once hot, add the minced garlic, grated ginger, and chopped onion. Sauté for about 2-3 minutes until the onion is translucent.

      Cook Chicken: Add the ground chicken to the skillet. Break it apart with a spatula and cook until browned, about 5-7 minutes.

        Add Bell Pepper: Stir in the chopped bell pepper and sauté for an additional 3-4 minutes until they soften.

          Flavor the Mixture: In a small bowl, whisk together the soy sauce, Sriracha, rice vinegar, honey, sesame oil, and black pepper. Pour this sauce over the chicken mixture, stirring to combine. Let it simmer for 2-3 more minutes on low heat to meld the flavors.

            Bake the Mixture: Transfer the chicken mixture to a baking dish, spreading it evenly. Bake in the preheated oven for about 10-15 minutes until heated through.

              Prepare Lettuce Wraps: While the chicken is baking, prepare the butter lettuce leaves, ensuring they are intact for filling.

                Assemble the Wraps: Remove the chicken from the oven. Spoon the spicy chicken mixture into each lettuce leaf, filling generously.

                  Garnish: Top with chopped green onions, cilantro, and optional chopped peanuts for added crunch.

                    Serve: Serve the wraps warm with additional Sriracha or soy sauce on the side for dipping, if desired.
